Main cuts:

  • Offals: Tails, Tongues, Livers, Hearts, Tripes, Kidenys, Stomachs, Fat.
  • Bone in cuts: Sides, Fore end with or without flank, Hind quarter, Legs, Shanks.
  • Bone less cut from hind quarter:Round of thick flank, Thick cap, Rumps, Topsides, Flanksteak, Striploins, Tenderloins.
  • Bone less cut from frontquarter: Shoulders, Chuck, Neck,  trimmings.
